OH MY GOSH!!! I am so jealous, because you can make Green Tomato Cake with Brown Butter Icing!!!! It is easily the best cake I have ever had! I make it every year toward the end of the tomato season, and it is to die for! When you see the ingredients, you’ll know why I only make it once a year. Holy butter, Batman!
It sounds strange, but the green tomatoes are just slightly tangy so they balance the sweetness of the cake. If you didn’t know they were tomatoes, you’d think you were eating an apple spice cake. I usually leave out the raisins and nuts. This year I made it to take to a cookout, and even though several other people also brought desserts, there was no leftover cake for me to bring home. :(
I did make fried green tomatoes once, and they were very good. My kids didn’t like them though, so I haven’t gone through the trouble since then.
You can also make Green Tomato Pie, which I have not personally tried. The recipe I linked to is very similar to one my grandma gave me, which her mom used to bake. She says it is a lot like apple pie.
