Silence of the Lambs, Se7en, and even Hannibal come to mind. They were gruesome, but the intellectual strategy going on in the killers’ minds was intriguing.

Yeah, all Hitchcock thrillers…where better to begin.
Another vote for Memento down here. Memento had a neat idea for a story to begin with, but the way the director chose to tell the story was the real hook. Other than that, The Departed, Donnie Brasco, and Pulp Fiction are some of my favorite crime movies.
