Here are a few of my favorite things (carrot wise) and some things that popped into my head, that I haven’t even tried or heard of that sounded good. Hopefully you can find something on this list to suit your fancy : )
Carrot Halwa is an East Indian dessert that is not too sweet. It features my favorite spice, Cardamom and is one of my favorite dishes of all time, dessert or otherwise. Some recipes call for rosewater, which also pushes it into the sublime. This one is pretty easy to make.
This Spicy Savory Carrot Dip sounds enticing.
Carrot Chutney Recipe One I love carrot chutney. This one is green with the addition of cilantro. Sounds relatively easy to make compared to some othe other recipes I’ve read.
Carrot Chutney Recipe Two This one is more the color that I’ve seen before and has coconut (make sure to use unsweetened coconut).
Two Kinds of Carrot Ginger Soup There are 2 recipes here. One is the basic recipe and the second one is a much spicier version, with additions. Both sound great. This is a vegan recipe, but you can use regular milk and/or chicken broth if you prefer.
Curried Carrot Soup
Roasted Carrots, Parsnips and Radish Chips These look amazing and can be used to garnish other dishes.
Carrot Pie Something similar to pumpkin pie that I never even thought of. Love the “crust” carrots in the photo.
Pickled Carrots These are just like the yummy hot carrots that they serve in the salsa bar at many Mexican restaurants.
Carrot Cauliflower Soup with Sesame Yogurt Cream This sounds divine, almost off the charts!
