Is there a classifying term to describe flavors like "coffee" and "chocolate"?

There is a gelato place next to my office and they have two freezers with glass fronts. One freezer has “fruity” flavors like mango and strawberry. The other freezer has flavors like “mocha” and “tiramisu” and “coffee” and “butterscotch”. What is the term for those kinds of flavors. At first I thought “savory” was the term, but “savory” also includes curries and caprese salads, IMO.

Maybe earthy? But not really. They both seem like their own set of flavor categories – chocolate, coffee, fruity, nutty, etc. I don’t know that we’ve really come up with a name for the category you’re talking about just yet.

Other (but I like Specialty).

I’ve never heard a formal classification, but what these all have in common is that the get a large portion of their flavor spectrum from Maillard reactions. In other words, they’re roast flavors.
