What I’m making right now: Meatballs!
Take a pound of ground beef or meatloaf mix. Dump it in a bowl. Add 1 cup plain dry bread crumbs, 1 egg, 1 tablespoon grated parmesan, 1 tablespoon fresh chopped parsley (or a bit less if you’re using dried), 1–2 gloves garlic, minced (1 if you’re a wimp, 2 if you’re awesome). Don’t bother with a spoon, just roll up your sleeves and mush it all together completely with your bare hands. Just wash them first! Then, roll the meat mixture into meatballs about the size of golf balls.
Next, dump a big jar of marinara sauce into a pot. Drop the meatballs in so that they are all pretty much covered by the sauce. Heat over medium heat until the sauce begins to bubble. Cover the pot, turn the heat to low, and simmer gently, stirring from time to time, for 30 minutes or until the meatballs are cooked through.
Meanwhile, cook some pasta according to package directions. Serve with the meatballs and sauce. Round it all out with some kind of veggie or salad and fresh fruit, and crusty bread to sop up the sauce.
The whole meal can be ready in 45 minutes or less. This makes enough for at least 4 people, so either freeze the leftovers or make meatball subs for lunch the next day.
