I cannot address the answer about which brand of griddle might be the best. Here is what I can tell you from personal experience as a former breakfast cook in several locations.
Product Ask the cooks in commercial establishments what they like and dislike about the make/model that they use. Read reviews. Make sure you find one that can easily be serviced in your area. Follow the manufacturer’s instructions for keeping it clean and calibrated. It can really throw the timing off when the edges are cooler while the middle cooks much faster.
Utensils Invest in a couple of pancake batter dispensers. Good ones. They provide consistency on the size of the pancakes.
The Perfect Pancakes For me, they are IHOP’s Harvest Grain & Nut pancakes. Fresh fruit is also a plus, like bananas or blueberries. Butter or margarine is desired, but I prefer to control how much is applied, so best if it is on the side, plus at room temperature. I do like IHOP’s pecan flavored syrup. For beverages, orange juice is nice; coffee is a must.
