@bookish1 I’m with you on the peanut butter and jelly sandwiches. I can’t stand them! Well, actually, I should say that I can not abide peanut butter in any form (yes, not even in Reese’s). I just plain ol’ don’t like it.
@jca, your post about a baked potato made me think of how I do mine. First, I make sure that it is scrubbed extremely well, as I love to eat the skin (and I once heard that that is where the nutrients are). Then I rub it all over with olive oil and sprinkle the outside of the whole thing with kosher salt. Then I bake it at 400 like most people, but I like mine pretty soft inside, so I bake it for 1½ hour instead of an hour. Then I scoop out the potato, mix it in a bowl with butter, good sharp cheddar cheese (I like Boar’s Head black wax cheddar), and bacon pieces if I’m in the mood and then I pretty much smoosh it up like it’s mashed potatos. Then I scoop it back into the shell and voila! Basically mashed potatos in a shell, but with the incredibly crunchy skin from the olive oil and kosher salt.
That, an ear of really good Florida corn (just got some today, yay!), and I fry up some yellow (summer) squash with onions, and that’s a meal for me. No need for meat, although I’m not a vegetarian, but I just don’t eat it much.
