Can you recommend vegan cookie recipes that you have actually made and enjoyed?

The type of cookie doesn’t matter, so long as it is a vegan recipe that you know is tasty. I am making cookies for a good friend’s baby shower and she has some family members that are vegan. I’d like to provide both traditional and vegan cookies, but just Googling seems risky, since I won’t know what to expect and I don’t want entire batches of cookies that a lot people aren’t going to want to take off of my hands.

I am also on an elimination diet to check for food sensitivities because of a health issue, so anything that is or can be modified to be gluten free on top of being vegan would be amazing.

I haven’t tried any of her cookie recipes, but I do love The Minimalist Baker (the majority of her recipes are vegan and have gluten-free options.) She has plenty of other non-cookie sweets too, including brownies and muffins. Not Baby Shower food, but her pancake recipes are awesome, filling, and quite nutritious.

I have made these Oatmeal Coconut Cocoa Balls several times, only I used peanut butter instead of almond butter. I thought they were fab, and even my Dad, who won’t touch “vegetarian food” with a ten foot pole liked them, mostly because of the cocoa. Plus, they are no bake, so they’re quick and easy to make.

Most rolled oats have been “contaminated” with gluten containing ingredients, like wheat, because of the manufacturing process, but you can avoid that by using a gluten free rolled oats product such as Bob’s Red Mill

I’ve also made these Banana Oatmeal Cookies. I used dried cranberries, but I’m thinking dried sour cherries would even be better. You can leave the nuts out, if someone has a nut allergy. These were very good too.

Ok, so I’ve been a vegan for awhile, I can pretty much convert any cookie recipe into a vegan cookie. I do it all the time. For example most regular cookie recipes need eggs, which actually is only used as a binder. You can use 2tbsp of applesauce, a small banana, 1 cup of soy milk, half a cube of silken tofu, one tbsp of flaxseed meal, 3 tbsp of water or 1 tbsp of apricot puree or in light of Canadian thanksgiving 1 tbsp of squash puree. So anyway I also really really love getting recipes from this vegan I have a crush on :/

Also just a small note which he doesn’t tell you in the video or in the recipe to use organic sugar. Since regular sugar can be sometimes granulated using animal bone. Also make sure the peanut butter is either just peanuts and oil in the ingredients or you could use a product like this. There is also a great store online called veganessentials.com which you could find probably any product than you know what to look for possibly at the store because you can see the product visually. Also make sure the chocolate chips are vegan. A product like these.

You know I also never said if you wanted the cookies to be gluten free you could just choose a gluten free flour like rice flour. You could even potentially choose WOW butter and the cookies would even be free from allergies for anyone nut sensitive.
