What are your pumpkin recipes?

I have a 25–30 pound pumpkin sitting in my house….. I want to cook it but it has been over a decade since I tried… What are your favorite ways to cook, use and store pumpkin meat? What are thoughts on baked seeds? How do you shell a seed to make a pepito?

I can only comment on baking the seeds, which is a tradition in my house. Delicious. Make sure you clean the seeds and thoroughly dry. Put in a bowl and put olive oil and salt, and mix up until they are all covered. Cook at 300 (?) degrees until they brown, stirring occasionally.

Unortunately, there’s not a lot you can do with the flesh of the giant pumpkin – they are grown to be decorative, not tasty. The seeds are great, though.

Check out this article for pumpkins that are best to eat. Sugar pumpkins will generally be the easiest to find, but right now you might be able to get some of the exotics like the Long Island Cheese, the Cinderella, or the Queensland Blue.

My favorite dish with them is pumpkin-butternut squash soup. I think we used this recipe.

I cook with sugar pumpkins. Some of my favorite recipes are for pumpkin bar with cream cheese frosting and for pumpkin pie. I also love spicy pumpkin soup.

Years ago I had a pumpkin bisque that was outstanding. And then the place that made it closed. Anyone have a recipe?

I love making spiced pumpkin pie tea.

I don’t have any exact measurments since I always just do it by taste but it’s pretty simple

Boil some water and add pumpkin, allspice, clove, nutmeg, cinnamon, a bit of vanilla extract, honey and brown sugar to desired sweetness. I will also occasionally add golden raisins as well.

I like to let this mixture simmer at a low heat for a couple hours(crock pots are nice for this). Once it tastes how I want it you just strain it into another container.

I love sitting outside on those brisk fall nights just sipping on a warm cup of this mmmmm

It’s also quite good for using as a base for a hot toddy :P

This really makes me want a pumpkin spice frappucino. I’ll have to resist the urge to stop at Starbucks on the way home.

@livelaughlove21 my three year old tried getting me to go for Mommy & Me starbucks after her haircut but her daddy was impatient to get to our next stop. So I owe her a chocolate milk next time we go by one. (she always gets a choc milk and mom a tall drink for a special but inexpensive “girls night” – we have also done it at DD, tried McD but their pumpkin latte sucked What I get for using a coupon to make it free lol )

I’m with @wildpotato , that those big pumpkins that are grown specifically for Halloween Jack o lanterns are not the best pumpkins, flavor wise, for recipes.

But if you are bound and determined to use it, This Site will give you step by step instructions on how to make a pumpkin pie (although he/she also doesn’t recommend that kind of pumpkin if you want something really delicious).

I love roasted pumpkin seeds, I don’t bother to try to take the shell/skin off of them. I just eat the whole thing. Here’s how to Roast Pumpkin Seeds I’ve never taken the extra step of boiling them in salted water before roasting them, but maybe I’ll try that method and see if they’re better.

Pumpkin Soup would be fantastic at this time of year. If you want a vegetarian version, just use veggie broth instead of chicken broth. If you feel the urge to make you own fresh Vegetable Stock that might be fun, especially if you have some leftovers.

Those recipes are delicious looking @Kardamom. Thank you. I made some seeds and some pumpkin butternut soup. Came out really good except my son thought I had skipped the herbs and added them in… after I had which made for some strong flavoring. :) I also found one for crustless pie I am trying for the holiday for the kids.
