For those of you who don’t like V-8, try the newer lower sodium kind. It tastes totally different and more like fresh veggies. It’s hard to find, though, because it sells out so fast. My mom used to make a comfort dish that is similar to your idea, Delrium. She would make pasta, drain it, add a can of tomato sauce, grate a good cheddar over that, melt it all together and it was yummy. She said she came up with it trying to mimic the canned pastas that had sugar in them and were also too expensive. Add mushrooms and you’ve got it made in the shade.
