What do you like to eat during the summer?

Summertime is upon us, the 4th of July is drawing near, road trips will be taken, some of you will go camping, some of you will go to the beach or the lake, backyard BBQ’s will abound, and there’s bound to be a few birthday parties and potlucks.

What are you going to eat? What are your favorite summertime foods? What are you going to make to bring to any of these gatherings?

I tried, unsuccessfully, to make a new recipe for potato salad that called for Greek yogurt instead of mayo. Not sure what I did wrong, but it tasted way too tart and didn’t have the creamy mouth feel that I usually associate with potato salad. It seems like the taters soaked up all of the dressing rather than coating the outside. I used red potatoes instead of russet, although the Recipe that I used called for red potatoes. Anyone have an idea of what I did wrong?

Maybe next week I’ll try a “classic” recipe for potato salad using russets and mayo.

All week I’ve been jonesing for deviled eggs, I’ll probably make some of those tomorrow.

Pickled anything. Raw veggies in different combinations. Salads all summer, thanks to the farmer’s markets.

Watermelon! Just bought one today and it’s chilling in the fridge now._
I love Plums, grapes, all melons, nectarines, peaches, strawberries and and cherries…ooooh CHERRIES!
I also eat a lot of cols slaw and sliced cabbage wedges, deviled eggs, potato salad, cold sandwiches like Tuna, Chicken salad, and BLTs with avocado. I also love just plain tomato sandwiches on toasted bread with lite mayo.
I’m a kid at heart and also keep Otter Pops and Italian ices in the freezer and frozen blackberries for snacking.

Sounds really healthy huh?
Then we add BEER! Lots of cold beer! lol

Pasta salad.
Grilled Portabella mushroom caps.
Tomato and Miracle Whip sandwiches.
Cheese and Miracle Whip (Ranch dressing also works) sandwiches.
Tuna salad.
Pimento Cheese.
Cheese and crackers (maybe a schmeer of butter).
Fruit salad.
Farmer’s market veggies, in season, raw or cooked.
Veggie pizza.

Watermelon salsa, cucumber salad, fried tomatoes and later my favorite Sweet Corn. When I die, I wish to come back as a corn worm.

Watermellon is the single best food after a couple hours of swimming in the hot sun.

Other fruits I eat fairly regularly in the summer are raspberries, bananas, strawberries, pineapple, cherries, and cantaloupe.

I like a few different salads. Favorite dressings are ginger dressing and rasberry vinagrette in the summer. Or, tuna salad on a bed of lettuce with a lot of lemon over everything.

Stir fry with lots of veggies. Favorites are zuchini, mushroom, and corn.

Cous cous with mint and veggies mixed in.

French green beans, I like them all year long as a side for almost anything.

Vidalia onions! The best onion ever. I slice them and sautee them, and put them over steak, or use them raw and chopped in pico de gallo, add them to omelettes, I use a lot of onions in the summer.

Anything from the farmer’s market or my garden. Grilled corn is awesome.

@ibstubro I almost had a mini orgasm when you mentioned pimento cheese.

@Adirondackwannabe We have a fabulous farmer’s market in our town. One booth specializes in pickled veggies and kimchi. Yum!

@majorrich Corn, corn and more corn! I love it fresh off the cobb, barbecued, boiled, microwaved, put into Salsa, put into Chowder and turned into good old popcorn!

@talljasperman You might enjoy some lovely Earl Grey iced tea instead of the soda. And check out some of these salads. They’re healthy, tasty and filling. @Coloma Otter Pops are an essential freezer staple.

Watermelon is so dang expensive anymore! Luckily it goes on sale a lot, too.
Actually, come to think of it, all of the veggies seem to be more expensive. Bah, stupid California drought!

Watermelons and mangoes!
I am a melon fan any sort will just do.
They are great for summers apart from the fact that they are skin healthy, they help increase water level in your body.

I also make this tuna pasta salad, sounds kinda strange but it is delicious.

Boil small shell pasta, about 6 cups & drain duh
Add diced cheddar cheese, minced red onion, diced sweet pickles and a large can of solid white albacore tuna. Mix with lite mayo.
Chill for about 2 hours. Try it, you’ll like it!

I buy a lot of blueberries, tomatoes, peaches and potatoes at the Farmers’ Market. Soon I’ll add Vidalia or sweet onions. I love cantaloupe, too.
@Coloma , I didn’t know I could freeze these blueberries! I should have known and I’ll be doing that now! Thanks! I hope the insecticide freezes well also.

@AshLeigh I too love blackberries. Check this out Blackberry BBQ Sauce! Doesn’t that sound delicious? I had something like this Lime Watermelon Agua Fresca at this vegetarian restaurant out here called Native Foods. I could have drank a gallon of it.

@Aster Those sweet Vidalia onions are fantastic aren’t they? You can eat pieces of them just like apples.

@Kardamom I eat yellow onions like apples. I love them (bad for the breath though). Sweet onions are not for me. Just not the same.

@flip86 Wow! You are brave. The regular yellow onions are a bit too pungent for me to eat raw like apples. However I do love them made into Onion Rings (although this particular recipe calls for white onions, but not sweet onions).

I have a fabulous and super easy recipe for Red Onions Pickled with Citrus. These are so yummy as a topping for burgers or as a side to Mexican food. And they’re pretty.

I love sauteed and grilled onions, onion rings, paper thin slices on a burger, minced red onions in salads, cooked onions in sauces and stews and soups, but no eating onions like apples. Gak!

^^ Only the sweet onions. Check out the Vidalia our Maui onions. They’re sweet enough to eat a couple of pieces raw.

Funny, I mentioned the vidalias also, and I actually say all the time that “I miss apples in the summer, but at least we get vadalias back.” But, I don’t eat the onion like an apple.

@Adirondackwannabe Your “but” threw me off, because we had been talking about eating vidalias like an apple. Raw and take a bite. I said above vadilias are one of the things I look forward to in the summertime, I sautee them and put them on steak, and other meats, ans use them in other ways too. I have grilled them, they are delicious that way I agree. I rarely bother to grill them since I was living in TN, but now that we are back in FL maybe we will get around to doing that again.

Cipollini onions are tiny, sweet little onions. Great for stews, kebabs, on steaks and pickled. I love ‘em. You just have to learn how to peel them by parboiling and you’re good to go.

Oh goodness, this recipe for Roasted Cipollini Onions sounds wonderful.

Scroll down on this Site to the cipollini onions in Parmesan and thyme sauce. I’m drooling right now.

Although you might want to be careful after your bout of sweating a dizziness with those garlics and chilies.

My mother used to make a cold pasta-like salad using Japanese Cellophane noodles, fish, onions and fish all in a chilled vinegar and lemon dressing. It was so refreshing and I carry the memory in my mind. I found a recipe somewhere, but I can’t read Japanese other than a few characters any more.

@majorrich I’m trying to find a recipe for you.

Here’s a few that are not exactly what you are describing, but similar and they sound pretty tasty.

Thai Glass Noodle Salad with Shrimp

Glass Noodle Salad with Citrus Balsamic Soy Vinaigrette to which you could add fish of your choice.
