If it can be any part of the world I go with eggplant rollatini (very light on the ricotta, I like it heavier on the mozzerella for the stuffing mixture). Olives. Marinated and grilled zuchinni, mushrooms, and yellow and orange peppers. Orzo or farfalle pasta salad with a oil and vinegar based dressing (very light on the dressing) with peas tossed in.
