Re. the vegan diet, how do the animals we eat end up giving us Vitamin B12, Omega 3, Iron etc.

Is it a fact that you can’t get everything from a vegan diet?The animals we eat, like cows, pigs, etc., eat plants and/or grains. How do they give us Vitamin B12, Iron etc.? If they can be healthy without eating meat, why can’t humans?
