Have been on a lentil kick recently, so here are two simple and delicious lentil recipes:
1. Mujadarrah
Rinse a cup or so of lentils and start them boiling in 3 or so cups of water. (You’re going for a 3:1 ratio here). Bring to a boil and then cover and simmer. While they’re going at it, dice and sautee 2 or 3 yellow onions in your preferred oil (olive, peanut, vegetable, whatever).
When your lentils have been simmering for about 15 minutes, throw in your onions with 1 cup of rice. Simmer for another 20 minutes.
And that’s it!
2. Amazing Lentil Soup for People Who Are Stupid in the Kitchen
Cut up 4 green onions, 3 peeled carrots, and 1 peeled potato (or a couple of smaller ones!). Sautee in a couple tablespoons of your preferred oil for 4 or 5 minutes. Toss in a few tablespoons of tomato paste and mild curry paste. Add 2.5 cups of vegetable broth, 2.5 cups of water, and 1 cup of lentils. (All proportions are negotiable—I ended up using the entire jar of tomato paste and the whole carton of veggie stock as I see no other impending use for either.)
Bring to a boil. Reduce to a simmer, cover, and let it hang out for 15 minutes or until everything is tender and delicious.
