You can open the package and freeze individual slices after wrapping. I do that with bacon.
I open the package and wrap bacon in groups of 2 or 3 slices in wax paper and then put the whole bundles in a large baggie in the freezer. I have a friend who freezes bread in groups of 2 slices. She opens bags of bread and slips wax paper every 2 slices. Freezes the whole bag. She takes out 2 slices every evening so she’ll have them for the next day.
Processed cheese isn’t real cheese and it’s formed/placed in the wrapper when it’s made. Individually wrapped bologna would be too expensive to produce, too expensive to sell, not cost effective: nobody would buy it, or not enough to make it cost effective. Check the temp on your fridge: should be at least 45 degrees.
