Leftover fresh thyme: recipes?

I had to buy a much larger quantity of thyme than I needed for the soup I was making. I hate to throw out the rest, but I don’t have a lot of uses for fresh thyme.

Suggestions?

Vegetable dishes are welcome at our house, as is just about anything that involves potatoes or pasta. Rice is popular, but usually just cooked plain. We eat a lot of chicken and fish, some beef. My husband is a carnivore and I am mostly an herbivore, but we generally compromise as omnivores.

We do avoid long, complex recipes with offbeat ingredients, things that take an hour of chopping, and things that involve significant time standing and mixing, stirring, or handling. My husband and I both have backs that suffer with prolonged time on foot and activity that pulls on the back muscles.

At our house, “NED” stands for “new, exciting, and different.” We bore ourselves a lot, so we always want something NED for dinner—but not too NED. That’s what makes it a tricky proposition.

Im all about cocktails. So how about this:

Bourbon Thyme Cocktail

4 teaspoons thyme simple
(½ cup honey, ½ cup water, 4 sprigs fresh thyme all simmered together in a saucepan then remove thyme sprigs and allow to cool)
3 dashes Angostura bitters
1½ ounces bourbon
Shake with ice then pour in a rocks glass. Add 1 lemon peel for garnish.

I will usually substitute a rhum agricole or cachaça for the bourbon as I’m a rummy.

@AstroChuck Your version almost sounds like a mojito with thyme instead of mint.

Except you’d use an unaged rum and club soda as well. Not to mention the lime.
