No. The boss knows what price is being paid on what inventoried item, and the receipt shows who made the purchase, how much sales tax, etc. All that’s left is for the money collected to equal those amounts.
No different than paying cash to a waiter, or cashier.
If you tip in cash, it’s better for the person being tipped. They only have to report a certain percentage of their tips. Tip in cash whenever possible.
Businesses reconcile their income and outgo every day, sometimes more than once. If some one delivers a pizza but doesn’t turn the payment in it will be caught.
