How can make this PDF editable so I can type in the fields without having to print it off and fill out out by hand?

Delete Adobe Reader from your computers. It’s about the worst option. Instead use a free program that lets you type (and draw) on top of the PDF, and save it as a PDF.

On Windows, use “PDF-XChange Viewer.“https://www.tracker-software.com/product/pdf-xchange-viewer

On Macs, the built-in Preview program does it.

Oh my God this is frustrating!! I got a call to interview for this position. For some reason HR said they didn’t get the staff ap I sent, along with my resume and cover letter. I show that I did send it. However, in looking it over I realized I’d forgotten to put how much I was paid at a previous job….And now the SOB won’t let me edit. I get as far as adding text, then a pop up pops up demanding I start my “free trial.” I finally said OK to that….but it continues to pop up and it WON’T LET ME EDIT. It’s a viscous circle.

I am guessing the free trial is Adobe Acrobat. Don’t use it.

PDF-XChange Viewer or Apple Preview will let you write on top of the PDF (not original, mark on top of it).

Or just print it out, edit neatly by hand, and scan that into a PDF.
