I would go for salad and dessert. Cook the rice and let it cool. Mix the chopped eggs, the pico de gallo and the cheddar with the rice.
And for dessert mix some marmalade with the yogurt.

I would skip the yogurt, add chopped mesquite/pecan-grilled chicken and a mixed grill of peppers & onions.

I knew a guy to whom I gave the nickname “mexican rice blob”.

here’s what I did with the above ingredients:

Cut eggs in half, scooped out yoke.

Filled half of the halves with warm rice topped with melted cheddar (not sauce!) and the pico de gallo. Heated just for 10 seconds in micro

The other halves I filled with yogurt and and crumbled bacon. Delish….

Hmm… Great recipe! You know, there’s a portuguese cook (a very old one now) that used to host a show on TV where she would only make recipes with left-overs. It’s amazing what you can do with just the stuff you have in your fridge.

Add tortillas and make a quesadilla.

Shred the cheddar and chop the eggs. fill the tortilla with the cheese mixture and some pico de gallo. Grill until cheese is oozy. Top with yogurt and have wild rice on the side.

@gail: Pretty interchangeable with salsa, but salsa is a little more wet or saucy. Pico de gallo uses firm tomatoes, onions, cilantro, peppers all chopped up. I prefer it to salsa because it’s not as sloppy and doesn’t destroy my whole wheat tortillas!

The only difference I could see was the amount of hot peppers, which hurt my throat. Isthe translation “rooster bill” because of the shape of the pepper?

Can I squeeze a pity-entry in here? I just found out today that my little girl is allergic to CHEESE!!
I feel so bad for her, she LOVES the stuff. I was right in the middle of giving her a world tour of the wonderful world of cheese. I guess I can switch to redmeat – something else I’m an authority on.

@Strat; is she allergic to all cheeses? That would mean an intolerance for milk products, including ice cream. Or is the issue just the hard cheeses?

@wrestlemaniac: Not necessarily. I’m allergic to milk but not to dairy products like yogurt and cheese.

Yes, of course, but it’s processed milk. Meaning that bacteria take care of decomposing the milk molecules you can’t digest.

@wrestlemaniac: Yeah, everything BUT hard cheeses. Also, when she went back to get the results of another test, WE HAVE TO GET RID OF HER CAT!! She was pretty broken up about it ‘till a close friend said they’d take Cinderella for us, so we can go visit anytime.
