What do they do with industrial quantities of eggshells?

Costco, and probably many other stores, sells 24-packs of
hard-boiled (and shelled) eggs.

My assumption is that the egg processor has some machine that puts just enough pressure on the shell to crack it, and then some combination of air (vacuum) and water removes the rest of the shell.

What do they do with a zillion eggshells a day?

Maybe fertiliser, or feeding it back to the chicken.

Eggshells are often used as a substitute for limestone.
