I guess it’s brick over stick.

Pocket is a bit of a misnomer. It’s not pocketing inside the wall.

In Florida we have sliding glass doors that are triples or quadruples and the doors slide behind the wall so the entire opening can be open. It’s not the expensive folding doors or pocket inside the wall doors. This is the inexpensive way for the same effect.

Can it be done up north on a brick house?

Issues would be: electrical outlets, water/sewer lines (for second story) and insulation (you said up North).

Electrical outlets Receptacle outlets in habitable rooms shall be installed so that no point measured horizontally along the floor line in any wall space is more than 6-feet from a receptacle outlet. A receptacle shall be installed in each wall space 2-feet or more in width.

^^The doors are outside. When the doors are open you don’t see them at all if you are inside the house looking out.
