What’s your latest cooking concoction made with ingredients waiting to be used?

A close friend gave me two golden delicious apples a week ago. A few days ago I cut one in half and took a taste and it was subpar in texture and flavor. I put the other half in water. It sat there a few days and then I decided maybe making an apple cake could salvage the apples rather than eating something I didn’t enjoy or throwing them out.

I’ve never made an apple cake so I googled some recipes and am very happy with the outcome! I made half the recipe and added 3 teaspoons of applesauce. Not measuring teaspoons, but rather flatware teaspoons. Since the apple sauce is sweet and adds moisture I cut the sugar from 1 cup to 7/8ths-ish. Plus, I cut the oil a little.

Chicken broccoli. Remarkably easy, but I’ve been putting it off until we run out of other food. Since we are snowed in, we’re planning ahead.

Today I made a casserole with roasted spaghetti squash and sweet potatoes and cheese. It was basically like baked mac and cheese, only with the veggies in place of the noodles. It was really good. I have an air fryer (which is a misnomer, it is actually a concentrated convection oven) so I roasted the squash and sweet potato in that first, then I made a standard cheese sauce, and cut up some broccoli florets that I also had, then put all of that in a casserole dish and baked it just like mac and cheese. It’s one of the best things I’ve ever made.

I made a stew mixing the potatoes, onions, sweet potato, pork & beans left over from last nights roast beef, stirred into a casserole with split pea soup.

Apple nachos. Sliced up apples drizzled with melted frosting, chopped nuts, unsweetened coconut flakes, cinnamon and sprinkles (because the kids want sprinkles on everything).

Rice-A-Roni Spanish Rice with fried eggs over-easy on top. The runny yoke with the “Spanish-style” rice and tomatoes is pretty awesome.
