How would you cook a rib-eye steak?

I don’t eat meat much and rarely have a steak but I will be having Christmas dinner alone due to Omicron. I bought a thinnish rib-eye steak and am trying to decide whether to pan-fry it or grill it or what?

A Rib-eye would also be my go to choice because of its tenderness and flavor. The best way to cook ribeye steak is on the grill. But pan-seared ribeye steak is also delicious.
For Grill:
Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare, 5 to 7 minutes for medium or 8 to 10 minutes for medium-well. Tent loosely with foil and let rest 5 minutes before slicing.
Pan-Seared:
Place skillet in oven and preheat oven to 450°F. Brush both sides of steak with oil and season with salt and pepper. When oven is heated, carefully remove pan and place on stovetop over medium heat. Place ribeye steak in skillet and sear for 2 minutes. Flip, top with garlic and thyme and place skillet back in oven for 6–7 minutes. Flip steak, top with butter and carefully tilt pan while scooping melted butter, garlic and thyme to continually coat steak for 1–3 minutes. Let rest five minutes and coat with browned butter before serving.

@Forever_Free C’mon a my house! You cook the steak while I make my killer country fried potatoes. Serving it with creamed spinach.

On the grill. Seasoned with Italian, lemon peeper, and Worcestershire sauce.

NO LEMON PEEPER OR WORCESTER SAUCE!!! The flavor of the steak can stand on it’s own. Plus you don’t want my dad rolling over in his grave!

I pan fry steaks much like @Forever_Free described (but not as long). I also use Montreal Seasoning liberally.

@filmfann Yeah – that seemed a long time to me too especially as it’s not a very thick steak.

Make sure the grill or pan is really hot when you throw the meat on.

Place steak on a small pat of butter in hot iron skillet. Cook about three minutes on medium heat. Salt then turn. Salt then cook 2–3 minutes. Ready. I like steak cooked like this but I also cook them outside on charcoal or inside on a smokeless grill. I usually do not season but a little granulated garlic sometimes.

I said “Yes!!!”
Alas. They didn’t have steak. He brought home pork chops.

@SnipSnip I used to grill them on the gas grill but they come out fairly dry that way so I want to try pan frying.

Everyone talking about steak, now I want me one. Having turkey and dressing today. Dang it! Roast beef tomorrow though. Is it tomorrow yet?

Sear it for a moment on both sides in a hot pan then lower the heat and let cook one side at a time until done to however you like it. But cook it dry, don’t cover it with a lid. Season as you like.

@Dutchess_III It came out really well; perhaps just a bit over cooked. I used a combination of suggestions from here, some YouTubes and my own cooking knowledge. Dried it, seasoned it, seared it in hot oil on both sides, turned down the pan a bit, added some butter to the pan and then cooked it some minutes more. I thought the home fried potatoes would be too heavy with it so I made oven roasted baby red potatoes and the creamed spinach.

I am full and probably won’t eat steak again for several months!
