The idea behind a frost killing plants is that the water inside them freezes and the expansion of water within the pant is killed. I'm guessing parsley has a few chemicals mixed in the water that act "like" the antifreeze in your car thus making the temperature to "freeze" the plant lower than that of frosting conditions that kill other plants.
