What is masking?

in photoshop, what does the term masking entail?

I know exactly what it does, but it is hard for me to describe. Basically if you draw a star shaped mask and you apply it to photo, the only parts of the photo that are visible are inside that star shape. It doesn't actually delete the rest of the photo, it just hides it.
