i can’t think of an ethnic food category that i don’t like.. but here are several ideas/suggestions:
Vietnamese (they use a lot of lemon grass, very refreshing)
Thai (all the dishes with coconut are delic!)
Mexican (americans are lucky that we boarder mexico! europe has horrible “mexican” food)
Indian (north and south, lots of flavor in every dish! and the mango custard YUM!)
Ethiopian (kind of like indian, similar spices)
those are all generally spicy, so if you don’t like spicy maybe look to eastern european/ middle eastern things like greek, bulgarian etc they use a lot of yogurt for that cooling effect on lots of meat and the occasional falafels.
