As long as you get enough protein, fiber and the various essential vitamins by eating something with your rice, you should be fine. My husband is Asian and he eats rice every day and sometimes twice a day (he claims if he doesn’t his “eyes will go round”).
You might consider eating brown rice sometimes because it has more nutrients and fiber in it – in fact Asians eat it when they are feeling under the weather because it is healthier.
You might also try some of the different varieties of rice just for fun. There is basmati rice, jasmine rice, wehani rice, Texmati rice, and other “aromatic” rices. There are also short grain like Calmochi and Japonica, medium grain (typical of sushi rice and Arborio rice used in risotto) and long grain (indica) rice. There are special rices such as sticky or glutinous rice, or even red, mahogany or black rice.
I would tend to avoid things like Uncle Ben’s simply because the more something is pre-treated the less confident I am that it has all the nutrition it should. I also don’t like the taste.
