Beer Braised Chicken
Ingredients:
* 4 chicken leg quarters
* 1 can (12 ounces) beer
* 1 cup chili sauce
* 4 to 6 medium red potatoes, peeled and cut in 2-inch chunks
* 2 stalks of celery, sliced
* 4 carrots, peeled & sliced
* 1 medium onion, sliced
* 1/4 cup flour, mixed with a little cold water to make a smooth paste
Combine all ingredients except flour mixture in crock pot. Cover and cook on LOW for 5 to 7 hours, until chicken is cooked through but still moist. Add flour and water paste to the sauce during the last 30 to 45 minutes. Continue cooking, covered, until sauce is thickened. Arrange vegetables and meat on large serving platter. Serve sauce separately. Garnish with parsley, if desired.
Serves 4 to 6.
Note: this is also good with chunks of stew beef or a pot roast, and with pork ribs. You can also add a bay leaf and substitute wine for beer. You can replace the chili sauce with broth also.
Barbacoa (actually fake barbacoa because you don’t use a cow head)
Ingredients:
*4-pound chuck roast
*water to cover
Put roast in the crock pot. Put in enough water to cover the meat just barely. Cook on LOW overnight. Use a large fork to separate the meat into chunks, add salt to taste, and serve with flour tortillas and either pico de gallo or your favorite salsa. Tastes just like the real thing.
