Better or worse to drain sour cream?

When you have sour cream in the fridge for a couple of days, a liquid appears above the cream. Will the cream last longer if the liquid is drained, or mixed? Will it affect the taste if the liquid is drained?

I usually just stir it all together.

I think it would dry out if you don’t mix it. I always mix it…

I stir. I t takes about 3 seconds for it to become one.

I love sour cream. I eat it three or four times per week.

It’s the water separating from the milk. Same principle as curds and whey. I don’t think it affects it either way.

I pour it off, it is like the liquid in the tofu pack or feta cheese or even cottage cheese! I just don’t like the way it looks. I don’t know about drying out, as long as you keep the lid on the container, I don’t think it would???

I drain it. It looks kind of gross :)
but either way it doesn’t affect the taste.

If you put sour cream in a fine strainer and let it sit for 1 or 2 days, the result will be a thicker, more concentrated, and more flavorful product. You can drink the liquid, which is a bit like thin buttermilk.
