There are dozens of great dips and spreads that you can make in a food processor. Here’s one of my favorite:
Cheesy Artichoke Spread:
1 cup grated parmesan cheese
1 14-oz can artichoke hearts
Blend ‘em up in the food processor until they’re pretty smooth, then microwave for 30 seconds (or until the cheese gets warm and gooey). Serve on toasted pumpernickel bread.
PS. You can make the cauliflower puree w. fresh veggies (break into florets, nuke or steam w. a little water), blend and serve w. a little salt, curry, cumin or just throw in some dried cranberries. Not as rich as Jill E’‘s w. cream cheese and butter but fine.
