Not sure if you have already started on something, but I have a suggestion: take seven environmental portraits! This involves photographing people in their workplace or even at home – it can also involve photographing animals in their natural environment.
I had a project like this photography course I took in high school – we were assigned to take photos of people within various job settings. I shot some photos of people working in fast food, commercial airline pilots in their cockpits, barbers in an old barber shop, writers typing away at a newspaper firm, and the ice cream man handing out treats to little kids who were too short to reach and had to jump up to grab them.
To take photographs in some of these settings, you’ll need to ask permission first – my dad is an airlines pilot, so that’s the only way I was able to take a photograph of his co-workers in the cockpit. But in other areas, as long as you can be discrete then you shouldn’t have a problem. Good luck and have fun! :)
