I’ve never enjoyed any white wines with cheese. Maybe a very dry one, but most are too sweet for cheese in my opinion. Port goes great with dark chocolate, but I also think it’s too sweet for cheese. I prefer a bold dry red, like a cab with a sharp cheese. Merlot works well, too, and adds a spicy note.
Bottom line: drink what tastes good to YOU with cheese. I don’t mix sweet and savory much, which is why my wine/cheese tastes are as they are. Obviously, @mass_pike4 is far different from me. You are likely different from both of us.
