@tedibear39 I use almost the exact recipe. Mine calls for ¼ tsp nutmeg in with the dry ingredients and two eggs instead of one. The other ingredients and the mixing method are the same. Always turns out great!
If you like apples and cinnamon, try this: Make pancake batter according to whatever recipe you decide to try. Peel and core a granny smith apple, then slice it so you end up with ¼ inch-thick apple rings. Heat your greased pancake griddle on medium heat. Put an apple slice on the griddle, and pour just enough pancake batter over it to cover the apple. When the top of the pancake bubbles and the edges look set, flip it. I keep pancakes warm in the oven on the lowest setting while I finish cooking the rest of the batter. The apple slices cook perfectly along with the pancakes.
Top the apple pancakes with cinnamon syrup. In a small saucepan, stir together ½ cup granulated sugar, ½ cup brown sugar, and ½ tsp ground cinnamon. Stir in 1 cup water and bring to a boil over high heat. Boil, stirring occasionally, until the syrup thickens, about 10 minutes. Keep in mind that it will thicken a bit more as it cools, and if you boil it for too long the syrup will turn gloppy. Still tastes good, but doesn’t look as nice. Anyway, remove it from the heat when it’s thick enough and stir in 1 tbsp butter and ½ tsp vanilla extract. Pour over pancakes. Die and go to heaven.
You can also make raspberry syrup with just a bit more effort. Mix 1 cup sugar and one cup water in a saucepan and bring to a boil. In a small bowl, mix 3 tbsp cold water with 1 tbsp cornstarch until smooth. Whisk it into the boiling sugar water, then stir in one 12 ounce bag of frozen raspberries. Bring back to a boil and stir well. Continue boiling until berries have broken down and syrup is thickened, about two or three minutes. Strain it through a fine mesh strainer, mushing down with the back of a spoon to remove some of the extra pulp and seeds. Delicious, and you can use it on other things besides pancakes. Vanilla ice cream, pound cake, oatmeal…so yummy.
