these cheeses are left for some considerable time ( sometimes over a year ) to go mouldy. So why do they have a sell by date?

Because once they leave the care of the cheese producer, they are susceptible to other sorts of spoilage: bacteria, other not-so-tasty molds.

There’s nothing to stop the bacteria/fungi that make them taste so good from stopping—at a certain point you won’t want to eat what remains.
