What dinner can I make with my leftovers?

I have (roughly) one and a half cooked, cubed chicken breasts; a cup of mashed potatoes (rustic, with skins), ½ cup of peas, and 2 cups of chicken gravy. They have all been mixed together and refrigerated in one dish. I’d like to make some sort of casserole dish with them for tonight’s dinner. What should I add? How much of it? How should I cook it?

Well, you can just make some rice at the side and I think it would make a pretty good meal. Although, i would like to add some steamed vegetables to the leftovers to increase the nutrition value ( vitamins and healthy stuff). You can add some squarely chopped carrots,some beans, etc…

Definitely put that in a casserole dish, sprinkle some cheese and bread crumbs on top, and cook until the top is GBandD.

This is making me hungry.

when theres left over meat, i usually just add egg and recook/reheat them all.

I’d do a chicken version of shepherd’s pie—chicken on the bottom, then peas. Maybe mix in a little corn or mixed vegetables. Add a little gravy. Top with mashed potatoes, add a little grated cheddar cheese on top. Bake at 350 until hot and cheese is bubbly, serve with remaining gravy. Yum!

Soup , pies , hotpot , or a curry

I like the chicken shepherd’s pie, that sounds good.

Or when I want to stretch with protein added I will cook a mix of red and brown lentils in chicken broth, add that and a can of tomatoes. Sounds like a good mix to me, sort of Italian but not totally.

Tell us what you did when you are finished, please!!

If it’s already mixed together, I would add just a few more already cooked veggies, from a can is fine. Then top with a biscuit crust and bake. Sounds yummy to me. Add a nice salad and you have supper!

Mix in some egg and some more veggies, shape into cones, roll in flour, then eggwash and then in seasoned bread crumbs, spray with olive oil (I have one of those pumps, so I don’t buy the “non stick spray” in a can)

Bake at 375 until heated and browned

Serve with chicken gravy (Ok, you can buy that in a jar or Knorr makes a very nice product)

“Walla” you have oven baked chicken croquettes!

Mix it with 4 eggs.

Pour in a baking dish, or pie pan. Bake 350 till done.

Voila, a frittata.

You could form the mixture into patties, coat them with panko (Japanese bread crumbs) and sautee them slowly until they are heated through and crispy on the outside.

Thanks for all of the suggestions! I got home too late to buy any extra ingredients, so I ended up tearing up 4 pieces of bread and mixing that in (built-in stuffing!). Put the whole mess in a casserole dish, topped it with shredded cheddar and baked it. It was yummy!
