Get yourself one of those rotisserie chickens and then you can make the following:
Asian Chicken Salad with Rice Noodles
Chicken Taco Salad (Note: if you want you can bake a flour or whole wheat tortilla on a cookie sheet in the oven, until it gets crispy, to use as your base, instead of tortilla chips, although Trader Joe’s has a bunch of very good, preservative free tortilla chips)
Or Pulled BBQ Chicken Sandwiches which you can serve with a side of Napa Cabbage Slaw with Lemon Pistachio Vinaigrette
Or Chicken Salad with Cranberries, Apples and Walnuts (serve on whole wheat bread, or some crusty artisan bread from Trader Joe’s or similar store, or just spoon it into lettuce cups.
Or White Bean Chicken Chili
Or Pasta with Chicken
Or Chicken Burritos with Black Beans
When you go to the store, get yourself one of those bags of pre washed salad greens, and then get some grape tomatoes, carrots and celery and beets and turnips and bring them home and wash them and slice them and put them in individual ziplock bags. That way, in the next few days you can just grab everything and throw together a quick salad. You might also want to have some slivered almonds or walnuts, or sweet spicy pecans that you can get from Trader Joe’s and maybe a block of feta cheese so you can mix and match any of these ingredients. Either get a bottle of your favorite dressing, or simply drizzle on a bit of Balsamic vinegar and extra virgin olive oil with a twist of fresh ground pepper.
