You could also add a teeny tiny splash of Balsamic vinegar (no more than a quarter of a teaspoon) with some chopped celery, chopped green onions and/or matchstick cut radishes for a bit of a bite and crunch.
For a differerent taste profile, you could add some chopped (fresh) parsley, a Teaspoon up to a Tablespoon, and maybe a pinch of dried dill, about a quarter teaspoon, and maybe some chopped walnuts, a Tablespoon, or instead of the walnuts, some sliced ripe olives, about a Tablespoon.
And for yet another option, you could add in some chopped sundried tomatoes (the kind in the jar packed in oil) about a Tablespoon or even 2 if you really like that flavor, like I do, along with some chopped marinated artichoke hearts.
And last, but not least, you might like about a Teaspoon of those yummy French fried onions, like you put on top of a green bean casserole. Trader Joe’s makes their Own Brand which are far superior in taste, and not so greasy as the French’s brand. I’ve been putting them on everything from sandwiches, to macaroni and cheese and topping my salad with them and eating them on the side, instead of chips. Yum!
