I make the most killer pepper steak sandwiches, buy thin sliced round steak or sirloin, sprinkle with seasoned meat tenderizer and let sit for 20 minutes. Toss in large skillet with small amount of oil and grill. In separate skillet sautee sliced yellow onions, green, red, yellow and orange bell peppers and drain off juices. Mix in with steak strips and cook a bit longer then, melt copious amounts of Provalone cheese on top, divided into portions and serve on sweet french rolls with mayo and sliced avocado. To DIE for. Prep. time maybe 30 minutes.
I also love grilled veggie quesadillas.
Slice onions, assorted colored bell peppers, zucchini, mushrooms and torn fresh spinach.
Sautee for a few minutes, fill tortillas, load on your cheese of choice and grill until all ingredients are melted. Serve with a killer salsa. Mmm good!
Last but not least, THIS is a wonderful fall meal in one.
Buy two loaves of frozen bread dough, defrost and roll them out together to form one giant pizza like slab of bread dough.
In a large skillet cook bulk sweet italian sausage and add fresh or frozen chopped spinach.
Drain mixture and layer onto bread dough. Cover liberally with shredded Mozerella cheese and then roll up the dough and pinch off the ends to seal the loaf.
Bake according to the bread dough instructions, basting with a bit of melted butter at the end to give the spinach sausage loaf a nice golden glaze.
Remove from oven and slice into portions. Impressive, easy and very good. A meal in one. :-)
