What to make with pumpkin puree besides desserts?

I’ve made both pumpkin bread and pumpkin brownies this week. I love pumpkin. I currently have half a can of pumpkin puree in my fridge and I’d like to make something besides a dessert type of recipe. Have any of you found any good savory pumpkin recipes, or have you experimented on your own with anything that turned out good?

Here is a pumpkin smoothie and here’s another (sorry that’s dessert-ish, but it’s the first thing that came to mind).

I’ve been looking at using sweet potatoes like white potatoes – sweet potatoes fries, chips and tomorrow hash browns. I wonder if you could shred pumpkin and make hash browns.

And there’s pumpkin soup.

And here’s animals going to town on pumpkins at the zoo.

Mmmmmm, pumpkin.

There is always soup. And, you can use it as part of the gravy binder for things like pot pies or shepherd’s pie. Or as a ravioli stuffing!

I just stumbled upon this – flour and pumpkin puree makes Two Ingredient Fresh Pumpkin Pasta.

Make a tomato, pumpkin and red pepper pasta sauce.

I tried making something like potato pancakes out of it but that experiment was a total failure. Maybe you can come up with a trick. Add some flour to thicken it, perhaps?

I bet you could make some pumpkin scones.

Otherwise, I agree with the soup idea.

This site has recipes for a pumpkin porridge (looks yummy), hummus (also looks delicious), burgers and a smoothie with dates and pumpkin! Yum.

So @Tropical_Willie‘s idea came closest to what I ended up making. I had a head of orange colored cauliflower in my fridge, so I ended up making a casserole with pumpkin puree mixed with marinara sauce, layered with cheese. I added a few spices and baked it.

Those of you in the super secret Facebook group can toddle on over there at your leisure to see the photos of the process and the finished product.

It was really good! I’m glad I wrote it down and photographed it while I was making it, so I can make it again and not forget what I did Lol.

Thanks @everybody for the lovely ideas : )
