For a brunch, I like to make a breakfast casserole. I mix up a dozen eggs with 1/2 c.heavy cream. Then I season with salt, pepper, and snipped fresh chives. I take a log of goat cheese and break it up into pieces. Butter a 13×9 x 2 pan, sprinkle it with the crumbled goat cheese and chives, and pour in the egg mixture. Note: If you will have no vegetarian guests, you can add cubed ham or crumbled, browned sausage or bacon.
Bake in preheated 375 degree oven for about 30 min. (When eggs are just set—test the middle—it is done.)
I serve this with a gorgeous fruit platter. Pick the nicest fruits in season, choosing a variety of colors. Add some special exotic fruits in the center. I like bunches of finger bananas and champagne grapes (both of which are available at most upscale grocery stores).
Add homemade muffins, biscuits, or warm bagels.
