because they are constantly using metal utensils in their non-stick-pans.

Or do they have some fancy top-secret frying pans designed by Lockheed Martin?

I don’t know. Maybe. They’re often sponsored, and so given brand new utensils (or even restaurant-kitchen oven consoles) for product placement on TV.

Could the pans be ceramic?

Ceramic pans don’t like metal utensils either. Most of these “celebrity” chefs have their own line of shitty nonstick cookware so I assume it’s in their interest to train people on how to destroy them properly.

I did bother to watch the video and he is using what appears to be an enameled carbon steel pan which can take that kind of abuse.

Metal utensils on non-stick skillets photograph better.

Funny you ask this because I noticed that on cooking shows, all of the cookware looks brand new. Pans are gleaming, glassware looks crisp and unscratched, towels look brand new. I wonder if they buy new equipment for each show or what their secret is to keeping it looking brand new.

Again, it’s product placement, whether it’s their own brand, or a sponsor. They aren’t “buying it” as a consumer, in either case. The point is to make it look good, yes they probably use brand new stuff.

Welcome to the pop culture of consumerism and fake/dumb-ass TV.
