To show appreciation. It’s like cheering on a sports event when you’re watching on tv; just makes the experience better.

We can observe similar behavior when someone enjoys many things… I think it’s a learned behavior…
Involuntary response.
Maybe people are shaking their heads to mean no, I can’t believe this is so good.
We’re using body language to show what we think. The food was probably new or anticipated….so it’s basically saying it’s worth the wait and highly flavorful.
