Turkey Tetrazini
Mom used to mix up cut-up pieces of turkey with flat noodles and a white sauce (sometimes with sauteed sliced onions) into a really delicious casserole
Turkey and Rice Casserole
This was always my favorite: Cut-up pieces of white and dark meet turkey, stuffing, gravy and cooked white rice. The rice would be about half the volume of the casserole, and into that you mix the turkey, stuffing, and enough gravy to moisten it well, but allow it to keep its shape. (You don’t want it to be a gravy stew, in other words.)
Both of these recipes are very simple and allow a lot of experimentation and alteration—and they’re simple—and delicious.
