I good quality Atlantic Salmon Steak, covered in fresh lime or lemon and HEAPS of cracked pepper and a bit of salt….stick it in the oven. (just sitting on baking paper, dont wrap it in foil or anything like that)
Bake some sweet potato, mushroom and onion lightly sprayed with olive oil and sprinkled with rosemary in the same oven.
Add some baby spinach, parsley, feta cheese and cherry tomatoes to a bowl.
take the salmon out of the oven, cut it into bite sized bits, and add it along with your baked veges to the bowl.
Add your favourite low fat dressing (mayo, a bit of lemon juice and sweet chilli mixed together is a real winner)....and then you have the best salad in the world…trust me :)
