Vegan lasagna. Replace the cheese layer with baby spinach. You can use all kinds of vegetables, but I recommend including at least some mushrooms. It is easy to cook using a slow cooker.
Vegan sweet (brown sugar) and spicy curry w carrots, onions, sweet potatoes, and any veggie of your choice. Over steamed jasmine rice if you eat carbs. Yummiest soup dish.
Again for carb eaters, black bean burritos w cheese and red sauce are always a hit. Greek salads w olives, feta and tomatoes as a side. Or baked potato, or sweet potato fries.
We also love cabbage sauteed in onion and garlic, maybe tsatsiki dollop on top.
